UEFI Asus Prime Motherboard

Hi,
I'm thinking of buying a custom built PC with the Asus Prime Z790-P motherboard.
I want to have multi boot - having (probably grub) and Ubuntu as the default boot device and a PCS installed Win11 as a secondary boot device.
What restrictions (if any) does the UEFI place on the choice of boot device?
Is there a good manual for the UEFI bios?

UEFI doesn’t place any limitations, it’s just a more secure layer to aid protection from bootloaders etc, the limitation can be on some Linux distributions not supporting secure boot (which windows 10 onwards require) although a lot of kernels have been updated now to include this, there should be guidance on that on the distro download page.

Any motherboard vendors site will have a manual for the BIOS
