Gaming pc (£2000) budget - 1st time!

I have always gone with Alienware but have decided to see if I can get more bang for my buck by not going through dell.

My primary use will be gaming, my budget is approx £2000 (with some room for flex +\- 200) but needs to include a new monitor.

Office and emails only outside of gaming.

Then the cpu is overkill just for gaming as well as overclocking. You could get the i7-4790 (non-k), triple copper heatpipe cpu cooler, 8gb ram, different SSD since the v300 suffers from performance issues, caviar black as the secondary drive since it is faster, homeplugs rather than a wireless card for a more reliable connection and at least silver warranty for £5.

For that budget I'd either get SLI 980s (with the intention of saving up for an uber monitor in the near future) or a single 980 with a much better monitor.

Can you easily switch to just one GPU as I have heard/read it can have a detrimental effect on some games?

Yes installing one is quite simple (I'm told... Haven't done it myself but I've seen it done and it looks easy).

And yes, you can choose to use just the one gpu (I'm pretty sure)

As I understand it will have significant benefit in many games but in some it can be detrimental, but you can choose to use just one card. If you look for an SLI review of any GPU they will give you benchmarks.
GTA is the most talked about game at the moment and that apparently does significantly benefit from SLI. I can tell you if my power supply was big enough I would have added another 970. As it is I've spent all my money on upgrading to a 1440p monitor which does make GTA look like I hoped it would (it disappointed me a bit at 1080p).
(I'm hoping come 2016 we can get a wafer thin Pascal for a less than a 970 that will easily feed 4k with room to spare (and if I thought technology was going to stand still I would get a Titan or two right now))
